Yes, I've done it again!!
Bought some lovely bananas, not ripe enough to eat, so I put them in the fruit bowl to ripen, and promptly forgot about them!!!
So I here I am left with 4 really ripe bananas, again!!
What shall I do with them? Throw them away - no!!
Banana muffins again???
No, don't fancy them!!
Something more healthy.... now that's an idea!!!
I had a trawl on the internet and came up with these!!!
Healthy Banana Flapjacks
So I weighed out the ingredients
Melted the butter and margarine (actually I used all butter, but you could use all margarine)
To the melted butter I mixed in the sugar and honey
Then the porridge oats
I mashed the bananas, and added them to the oat mix (I used double banana as I had so many!!)
Mixed them in well and put the mixture into a baking tin
Baked them for 15 minutes
Yummy, scrummy banana flapjacks!!!
I thought I'd better try them to make sure they were ok!!!!

Oooh yummy. I wonder if banana waffles are better? I prefer waffles to bananas...
Nice work! I always wonder why the fruit is never ripe enough when you are wanting to eat it, then slimy and erky when you next spot it!!!

Have you tried the 'Green Bags' yet? A friend gave me a couple and I love them.They keep the fruit and vegies lasting longer...I'm amazed how good they work.

They look fab, I often suffer from what to do with over ripe bananas. Usually make a banana loaf or choc and banana muffins. Might give these a try though.

Never tried these and as like you I always buy nanas and leave them to go too ripe i'm sure I must have some in the kitchen.

Yum, these sound and look wonderful - if only we had smellivision I'm sure they'd smell great as well.
Banana milkshakes are a great use for over-ripe bananas but then I would say that as I'm hopeless in the kitchen.
but beware those skins!! Now I just want banana muffins.........
You could of made a banana margarita and put up your feet...lol Well, at least that's what I would do...lol
It almost looks like a apple pan dowdy or some sort of cobbler...in any case..it looks scrumptious!

mmm ... they look tasty. That always happens to me too - before you know it you've got disgusting black bananas in the fruit bowl.
I'm ashamed to say I usually throw them out - but your recipe looks good enough to try!

So glad I did....just love Flapjack of any kind.Problem is bananas don't hang around long enough in this house to over ripen. Perhaps if I hide them......
What a delicious looking recipe. I will definitely try that one out. I love flapjacks and babanas so it will be perfect combination.
Homemade Banana milkshake is one of my favourites too. (Goats milk, ripe banana and a scoop of clotted cream vanilla ice cream...)

Looks just perfect with a cup or tea or coffee. It is always a problem of what do with overripe bananas isn't it.
